The samples of roots and blossoms, as given in the tableimmediately preceding were taken from the Station five months old alfalfa was taken from the farm of , Edina, Minn. The first and second crop alfalfa haywas taken from the farm of Mr. A. B. Lyman, Excelsior,Minn. The alfalfa seed was a sample of a Turkestan varietyfrom the U. S. Department of Agriculture. The smallamount of protein in the very young alfalfa is samples of hay from Mr. Lymans farm are believed tobe fairly representative of alfalfa hay produced in Minnesota. THE CHEMICAL DEVELOPMENT OF ALFALFA. 171. Fig. 6.—Two-year-old Alfalfa plants. 172 ALFALFA. THE FEEDING VALUE OF ALFALFA. A comparison of the composition of the dry matter ofalfalfa hay and clover hay is given in the following table: TABLE LXXVII. Composition of the Dry Matter No. of SamplesAnalyzed Protein() EtherExtract Fiber Nitrogen- Free- Extract Ash Alfalfa hay .. Red Clover 64 The most striking feature shown in this table is the largeamount of protein in the alfalfa hay. This substance is al-ways the most valuable constituent of a feeding stuff. It isthe substance which enters so largely into the compositionof the flesh and the vital fluids of the body, and in a dairyanimal, of the milk. Here then we have a source of proteinwhich seems to be far superior to red clover which heretoforehas held undisputed the title of being the best nitrogenousforage for Minnesota. With a
