Starch (complex carbohydrate) supplies the body with its main source of energy. The foods shown here are all rich natural sources of starch. They are (from left) rolled (porridge) oats, bread, potato, rice, pasta and wheat. The modern diet now relies much less on these natural sources of starch. Instead starch is scientifically manufactured as an ingredient for processed foods.
