American lobsters (Homarus americanus) dominate the paper plates in a restaurant that hold a popular meal known as a “lobster boil.” The food features the large crustacean and side dishes that often include corn-on-the-cob (here in its husk), red-skinned potatoes, hard-boiled eggs, dinner rolls and clams, plus melted butter in a small container and slices of lemon. Found along the northern coast of North America, this delicious seafood is known variously as Maine, Canadian, Atlantic, Northern and true lobster. Normally greenish-brown in color, these decapods turn very red when boiled to eat.

Found along the northern coast of North America, this delicious seafood is known variously as Maine, Canadian, Atlantic, Northern and true lobster. Normally greenish-brown in color when pulled from the sea, these edible marine decapods most often turn very red, which is the dominant pigment in their shells after being boiled in hot water. Notice that rubber bands have been put on the two large pincher and crusher claws to keep them from harming anyone handing the lobsters before they are cooked.
