Olive oil production. Extra-virgin (unrefined) olive oil released from olives being crushed at an olive oil factory. This traditional method uses stone mill wheels to crush the olives. Extra-virgin olive oil comes from the first pressing of the olives, contains no more than percent acidity, and must not have been refined. Photographed in the Brague mill, Opio, France.
