Native woman cooking traditional pupusas (cheese stuffed thick flatbread). Street food in Antigua, Guatemala. Jan 2019

A pupusa is a thick flatbread from El Salvador made with cornmeal or rice flour, similar to the Venezuelan and Colombian arepa. It is usually stuffed with one or more ingredients. These may include cheese, pork scratchings (chicharrón), squash, or fried beans. It is typically accompanied by curtido (a spicy cabbage slaw), and tomato salsa, and is traditionally eaten by hand, without the use of utensils.
