Packing Houses should be constructed so as to maintain a uniformly cool temperature in Summer and Fall because the fruit as it comes from the orchard contains a great deal of heat. This heat should be reduced to the minimum before the fruit is packed to insure its reaching the consumer in the best possible condition. The lower the temperature of fruit when packed, the better it will stand up under refrigeration and the longer it will keep in and after cold storage.
