The harvest of the hills takes place in the Wensleydale market town of Hawes, North Yorkshire as farmers descend on the local livestock auction market to buy North of England Mule gimmer lambs (female lambs from this spring) These lambs are sold for breeding all over the UK and are the backbone of the countries sheep production.
