Sow in early spring, in drills >2 inch deep and 18 inches apart ; thin out the plants to 12 inches. Keep clear of weeds during the summer, and the ensuing spring the leaves will be fit to cut. They are best, however, when blanched, which makes them tender, and destroys to some extent their bitter taste without in any way impairing the qualities which make them desirable as greens. The blanching may be done by placing a couple of boards over the rows thus : /\ This excludes the light and improves the greens, rendering them far superior to those found growing wild in the grass without cultivation, which are almost sure to be bitter, and are often unsightly and tough as well. Sow in hotbeds, very early in spring, and transplant when 2 inches high into a second bed or into small pots. If this is not done, thin to 4 inches apart. Do not plant out till the weather becomes perfectly settled and warm. Cool nights or wet weather will check them. Keep some back in frames for a second planting, in case of weather changing unexpectedly. Keep plants watered for a few days if the sun is hot when put out. Set out plants
