When the albumen iscoagulated or hardened by heat, it is not thereby rendered indigestible ; butthe yelk is. Although hard-boiled eggs are, as a general rule, difficult ofdigestion, yet they are sometimes found to agree with certain persons betterthan when in the soft state. Vinegar is said to facilitate the digestibility of ahard-cooked egg. All articles in which eggs are cooked by frying, as omelet-tes, pancakes, fritters, &c, are hurtful to delicate stomachs. Milk, when obtained from a healthy, well- fed animal, is very nutritious and wholesome,and it is more advantageous in its raw statethan when boiled. In combination with bread,rice, eggs, sugar, &c, it ought to form the chief portion of the diet of children, untilthey are ten or twelve years of age; and thosewho are thus fed, will be found stronger, andmore healthy and vigorous than those who areallowed to live upon meat, pies, cakes, andother delicacies of the culinary art. It is apreferable drink to tea, coffee, liquors, &c, andmay be used pure or considerably diluted withwater. A glass of milk and water, with asmall teaspoonful of salt added, is said to be the best refreshment that afatigued or famished person can take. One part of lime-water added to twoor three parts of milk, is useful to check obstinate vomitin
