The simplest of these contin-uous pressure devices consisted of a set of one to four coilsprings, enclosed in an iron box, which was put in the pressalong with the cheese. The springs were closed by thepressure applied at first, but later they expanded as thecheese shrunk. The Sprague device consists of a weighton a long lever arm, which in moving downward opens a 208 Cheese Making. toggle joint, and offsets the cheese shrinkage.
