A fire pit or oven for roasting the agave hearts at an artisanal mezcal distillery, in the valley of Oaxaca, Mexico. A worker is filling the oven with wood, which is burned and then the agave hearts, in the background, are piled on the coals and the pit is then covered with dirt and logs. A mezcal distillery is also known as a palenque or fabrica or trapiche.
