A cottage industry in Flores: the Arak processing (Indonesia). Between Bajawa and Ruteng, this rustic distillery is the final stopping place for the palm sap distilling process. At first the sap is collected by daring expert tappers from the top of a palm tree: the lontar. Then that is a really simple process of distilling; the distillery itself consists in three stills extended with long bamboos by way of coils. Une distillerie artisanale d' Arak à Florès (Indonésie). Entre Bajawa et Ruteng, cette rustique installation privée est le lieu où se terminera par simple distillation la récolte de la sève du palmier lontar qui est d' abord recueillie par d' audacieux spécialistes gemmeurs au sommet de l' arbre. La distillerie par elle-même comporte trois alambics prolongés par de longs bambous en remplacement du serpentin traditionnel.
