Seeds sown in spring out-doors produce parsnip-like roots which should be taken up in fall, trimmed and planted in a cool cellar covered with about 8 inches of soil. Over this should be placed a layer of fresh manure two to three feet deep, which forces a new growth of tender leaves that are used as a salad. It is considered a great delicacy.
