Home made Tikin Xic, Fish Baked In Banana Leaves. Tikin Xic, pronounced "teekeen sheek" in Yucatec Mayan means "dry fish". The fish is marinated in an achiote sauce, covered in escabeche (marinated red onions), wrapped in banana leaves, and placed on/in a pib (a type of grill used by the Maya in the Yucatan). The dish in the photo was made in my kitchen and baked in the oven.
