Gumbeaux Gator, the mascot and good will ambassador of Southwest Louisiana, in fact, was first named "Hal" as in "Hal the Alligator." However, with all the spicy gumbo in Southwest Louisiana, the pressure was on for a name change. It was decided that a hardy name like "Gumbeaux Gator" was the answer. Both Gumbeaux Gator and gumbo have been around for quite some time as favorites in Southwest Louisiana.
