Dinner at Elephant Crossing in Vang Vieng. Cheaw mak len – fresh tomatoes, shallot, roasted chilli minced as a dip for steamed vegetables. Oh laam - stewed pork with aubergine in aromatic herbs which turned out to be more of a soup than a stew. Mok pa which was fish steamed in a banana leaf with Spanish onions, lemongrass, dill and basil.
