Making of khejur gud Jaggery in progress - boiling sap of sugar Date Palm tree (Phoenix sylvestris)


Khejur Gur is prepared from the delicate khejur (Phoenix sylvestris) ras (sap) or the serum of the Sugar Date Palm tree, collected early in the morning (before 10 am) . After 10 in the morning, the serum tends to become stale and pungent. A date tree can secrete 3-4 litres of serum. In some rare cases a tree had even provided 8-10 litres of serum at one go. The serum is then boiled and stirred continuously for 45 mins to prepare the finest quality of Khejur-gur.
