The average production of cheese in Scotland isfrom 500 to 600 lbs. per cow. It is then in the power of the farmer to breed thebutter or cheese type, as he may select, and with theaid of the Babcock test, he can do this without theactual manufacture of either article of food. If bred closely to the butter type for a few 3^ears,the Ayrshire cow will become a formidable rival of the > 0 wX Cn. 57 Channel Island breeds, as is evident from the record ofindividual cows at the present time. In summing up, the Ajrshire cow is noted for itsvigor, hardihood and for producing a maximum quantityof good milk from a minimum quantity of food. The wedge shape and the large well-developedudder gives the ideal form of a dairy cow. Her averageweight is about looo pounds. The first Herd-Book was published in 1863. Thepublication of a Herd-Book by the Ayrshire BreedersAssociation began in 1876, and has been continued tothe present time—11 volumes in all.
