The Test.—The most convenient apparatus is that of Einhorn. IfEinhorns saccharometer is not to be had, the Doremus ureometer tubes willanswer the purpose of proving sugar present or absent. Each step in the process should be checked by comparison with a normalurine, therefore, two tubes are required. Technic.—(a) Boil the two specimensfor several minutes, to drive of any airthey may contain. (b) Add to each a pinch of tartaricacid in order to maintain their acidityand prevent ammoniacal decomposition. (c) Dissolve in each the same amountof yeast (about one-sixth of a freshyeast cake is sufficient).
