Compote of Pears.—Select fine-flavoredperfect pears. Cut them in halves, core,pare and trim. Make syrup of three-quarters of a pound of sugar, a pint ofwater and a squeeze of lemon juice, putthe fruit in, and let simmer until tender,but not soft. Take the pieces up care-fully and lay close together on a com-pote dish, boil the syrup until bits of fine apple jelly over thepears and pour the syrup around andberve.
