Why couldn't twenty or thirty farmers, who have good, pure-bred poultry, club together to ship their eggs to a New York or Boston commission dealer and get the better prices that would be paid for No. I's? Do you recall the story about the town in Canada where a grain dealer had influenced his customers to keep "better poultry and more of it," with the result that the Toronto dealers are now inquiring for eggs from that town and paying a cent a dozen above the market price for them? Pure-bred fowls lay larger eggs (as a rule) and better colored; better looking eggs than the common barn- yard scrubs kept on the major- ity of farms and the first step towards improvement is to get rid of the scrub hens and keep good pure-breds. Then, too, the average size of the eggs can be substantially improved by selecting the largest, best shaped and colored to hatch the chickens from. It is won- derful what an improvement can be made in two or three generations by this simple method, and we can have a new generation each year if we so elect; that means we can effect a revolution in our product in two or three years. We don't have to wait several years, as with the horse and cattle kind, to get results—we begin to get them six months after the chicks are hatched. The "quality" of the egg it- self, of the yolk and white, is dependent on the food ration of the fowls. If fowls are wel fed, and have a "balanced" ration, they will lay eggs that very closely fill out the shells and that a
