SALSIFY Ostion Vegetal, Sp. or VEGETABLE OYSXER One ounce for 50 feet of drill Culture.—Used the same as carrots, or, after having been boiled, made into cakes and fried like oysters, which they re- semble in flavor. Cultivate the same as carrots or parsnips; it is hardy; can remain in the ground all winter for early spring use, but should he taken up before it starts growing; take up a supply for use during winter. Succeed best in light, well- enriched mellow soil. Sow early in the spring in drills 15 inches apart, 1 inch deep; thin to 6 inches in rows. Mammoth Sandwich Island. (See cut.) This variety of Salsify grows to a very large size and resembles a good-sized Parsnip. It is very mild and delicately flavored, and very popular.
