Cooking katsuo no tataki (seared bonito) on a metal rake over a straw fire, Kochi, Japan


In Kochi a favourite food, attracting people from all over Japan, is a dish called katsuo no tataki, which is fresh bonito (similar to skipjack tuna) seared quickly over hot flames from burning straw. The outside few millimetres is cooked and the inside remains raw. This photo shows how this popular dish is prepared by holding a bonito fillet on a metal rake-like implement over the straw fire. The preparation takes place behind a glass shield so a few reflections were hard to avoid.
