The seeds(which are really fruits) aresown in early spring, aboutas soon as the soil can beprepared, in drills where theplants are to stand. Thedrills may be 2-3 ft. apart,if tilled by light horse tools, or half that distanceif tilled only by hand. In the rows, the plants arethinned to stand 2-5 in. apart. The plant requires theentire season, in the North, in which to grow. Theroots may be allowed to remain in the ground untilspring, for freezing does not harm them. In fact, theyare usually better for being left in the ground, because they do not shrivel and become tough as they often doin storage.
