Sheep Grazing At Mont St Michel


Famous for its fine meat and exceptional flavour, the Mont-Saint-Michel salt-meadow lamb owes its special quality to the pastures in which it is reared: in coastal meadows which are regularly covered by the tide, this gives it this delicious salty flavour. Mont-Saint-Michel salt-meadow lamb, a Grévine breed, has AOP status, being produced in a very limited area, and is only sold by registered artisan-butchers. Mont-Saint-Michel salt-meadow lamb is served mainly at Easter time, and has been bred in the area since about the 11th century. Every year in August there is a celebration in its honour at the Genêts bridge: thePrésSalésen Fête. This is an opportunity for local people and tourists to learn more about the rearing of salt-meadow lamb, with demonstrations of working dogs and wool-based crafts. There is a large rotisserie "à la ficelle" (the meat is cooked dangling from a string), where you can try this tasty dish.
