Calf's liver


A photograph of calf's liver, which as a food provides in one serving (4 oz - 112 g) almost 7 times the total daily requirement of vitamin B12, 6 times vitamin A, times copper, 2 times folate, times vitamin B2, 82% of the requirement for selenium, high doses of vitamins B5 and B6, mineral zinc and iron. This indicates an excellent nutrional value. Vitamins B12, B6 and folate are needed for the body to convert the potentially dangerous homocysteine into less dangerous molecules. Calf's liver is preferable to beef liver because it is free of metabolites which may concentrate in the liver later, as the animal becomes older.
