The pollack, Pollachius pollachius, was caught on rod and line from a boat in the English Channel and was cured and flavoured using salt, pepper, brown sugar, maple syrup, fennel fronds, crushed coriander seeds and beetroot juice. It is pictured on a slate background with dill and mustard sauce and garnished with wild garlic flowers and chopped wild garlic leaves. Dorset England UK GB
