Cutters carry sufficient flesh to permit of the loin or rib,or both, being used for block purposes, the remainder of thecarcass being canned. The cutter and canner class is made upmostly of old thin cows that are very paunchy, indicating a highpercentage of offal when dressed. Many of them are cast-offdairy cows which are sent to market without any attempt beingmade to fatten them. They dress from 35 to 55 per cent. Thelowest grade of canners furnishes a sort of comic supplement. Fig. 29.
