By making mustard entirely of onekind of seed, or of admixtures of the blackand white seed, a wide range in the qualitiesand prices of mustard is obtained. Evenwithout the addition of any foreign sub-stances, the mustard in which the whiteseed predominates can be sold at a verylow price. The following simple tests for impuremustard will be found of great value todealers if properly applied : A few drops of aqua ammonia added tomustard will turn it to a brownish red if ithas been colored with turmeric ; if not, itwill turn it to a light anahne color
