In cooking the roots are usually boiled, or they can be mashed and made into fritters. It succeeds best in light, well enriched soil. If it is necessary to use manure, it should be very fine and well-rotted. Sow early in»drills eighteen inches apart. The roots are perfectly hardy, and may remain out all winter. They are best after frost has touched them.
