If,however, the food be manufactured in unsanitarysurroundings, or if it be the bearer of tuberculosis,typhoid, measles, or scarlet fever, this can hardlybe detected. Hence, in my opinion, foods such asmilk and butter, meat, fish and shell fish, which arecapable of this kind of contamination, should re-ceive the greatest attention. The only safeguard against these sources ofdanger is inspection of the place of production andmedical supervision of the workme
