Modern, "gourmet" version of the "hangtown fry," a hearty meal that dates back to the gold rush of the middle 1800s in California. This is an appetizer size of the dish. There are two versions of the "hangtown fry" story. One is that gold miners who had just struck it rich wanted to celebrate with the most expensive meal of the combination of eggs and oysters. The second story is that prisoners condemned to die by hanging ordered this as their last meal because it was time consuming to prepare back then, thus giving them a bit more time alive. The dish has many receipes but all include eggs, bacon and oysters. This one is a tower with the oyster on top of the bacon wrapped egg, covered with hollandaise sauce.
