Caption: Axu, Sichuan, China - Aug 2003. An old lady makes tsampa, the staple diet for the majority of Tibetan Khampas. Made from ground barley flour, a dollop of yak butter and Chinese black tea, tsampa is increadibly nutritious for the nomads who do not include any form of fruit or vegetable in their diet. Mixing it with their right hand's fingers, they form the tsampa into a dough like ball which can then be stored and eaten while riding. Recent studies have shown that a large percentage of Khampa children are malnutritioned.
