Transgenic fungus research. Scientists comparing two strains of Monascus purpureus fungus. The fungus on the left of the screen has been genetically engineered to produce beta-carotene (orange), the fungus on the right has not. Monascus purpureas is used in Asia to make red rice, a fermented rice dish. This transgenic form could be used to combat vitamin A deficiency, which is common in Asia, as beta-carotene can be converted to vitamin A by the body.
