For this reason the outlet is equipped with two valves, both of which are closed dur- ing the condensing process. For taking samples, open the upper valve. This allows the condensed milk to run into the nipple between the two valves. Now close the upper valve and open the lower one. The milk v^'ill run out freely. The first sample should be rejected, as it may contain water caught in the nipple. For greater convenience and increased rapidity of sampling, especially constructed sample testers or striking cups, attached to the side of the body of the pan may be used. The latest in-.
