The prunes used for canning are generally Avhat are known as 50s to60s dried, or which run that number to the pound. They are packed. CANNED FOODS. 41 in sirup or in water, the extra grade being packed in 30° sirup, theStandard grade in 20° sirup, and the undesignated in water. They arepacked in No. lyi and No. 10 cans. Strawberries (Fragaria virginiana). The strawberry grows upon a ground vine, and the stem is taken inpulling the fruit. It is one of the most popular fruits when fresh, butthere are only a few varieties that give satisfactory results when fruit must be of fair size, firm, with astrong color, and rather acid. The fruit isstemmed, graded for size, and washed, thegrades corresponding to those of the black-berrj. They are packed in No. 2 and No. 21^cans. Fruit Butters. Fruit butters, compotes, jams, jellies, andpreserves of almost all the varieties describedare packed either alone or in such mixturesas the customer may desire.
