Detail of Tragopogon porrifolius or Salsify flower
Tragopogon porrifolius or Salsify is also known as goatsbeard, vegetable oyster and Jerusalem Star. It is a common roadside and open ground wild flower in south-east Britain. The tap root of the salsify plant is edible and is likened to oysters. The purple flower is only open during the morning and closes around midday.
