Healthy Food, Chickpea and Spinach Curry
Nutrient-rich meal called Chickpea and Spinach Curry, containing high levels of vitamin A and C, 6 grams of dietary fiber, 7 grams of protein, and no saturated fats. It would make a terrific choice as a meal, or a side dish over foods that are calorie-dense, higher in saturated fats and sodium. The recipe calls for spinach, tomatoes, chickpeas, and onion, and is seasoned with curry powder, ginger, olive oil, and a touch of salt. "Populations with diets rich in fruits and vegetables have a substantially lower risk for many types of cancer. In 1991, the National Cancer Institute and the Produce for Better Health Foundation launched a program to encourage eating at least five servings of fruits and vegetables daily. Although public awareness of the "5 A Day" message has increased, only approximately 36% of persons in the United States aged greater than or equal to 2 years achieved the daily goal of five or more servings of fruits and vegetables (28). A diet rich in fruits and vegetables that provide vitamins, antioxidants (including carotenoids), other phytochemicals, and fiber is associated with additional health benefits, including decreased risk for cardiovascular disease."
