A worker in the Hot Bread Kitchen removes chopped onions from the oven in La Marqueta in the Spanish Harlem neighborhood of New York on Tuesday, January 4, 2011. Hot Bread Kitchen, with the help of the city, has opened a kitchen incubator in the market, 3000 square feet for food preparation and manufacturing specifically designed for culinary entrepreneurs to jump start and expand their business. Hot Bread Kitchen will also use the space to train immigrant women in baking traditions to transition to jobs in the culinary industry. (© Richard B. Levine)
