Red cabbage, botanically Brassically Brassica oleracea var capitata is a member of family Brassicaceae, formerly Cruciferae. Most members are Brassica are vegetable crops, this variety with compactly arranged overlapping purple red leaves is used for salad as well as cooked vegetable. The leaves are rich in vitamins and anthocyanins. The plants should be harvested before leaves start spreading and flowering top starts appearing, as leaves lose their softness. The odd plants meant for seeds for next crop should, however, be allowed to flower and pods allowed to mature.
