A pink form of the edible Oyster Mushroom, Pleurotus ostreatus, highly prized by chefs. Cultivated at the Musee Du Champignon, Saumur, France.

Pleurotus ostreatus, the oyster mushroom, is a common edible mushroom and is grown commercially around the world for food. It is related to the similarly cultivated "king oyster mushroom". The oyster mushroom may be considered a medicinal mushroom, since it contains statins such as lovastatin which work to reduce cholesterol.
