France, Somme (80), Saint-Riquier, Saffron harvest at Fabrice Houdant's Safran du Scardon in Saint-Riquier. Fabrice started growing saffron, the most expensive spice in the world (€40 a gram), two years ago. He planted 50,000 bulbs in August and is now harvesting the of pruning, which consists of keeping only the red pistils that make up the much sought-after spice. Fabrice is passionate about his product and has developed a number of by-products, including saffron oil, saffron honey and saffron confit.
