[9051] Can any of your readers tell me of a cheap, simple and reliable test to discriminate between beet and cane sugar? âH. W. Learoyd. Reply.âWe are told by chemists that when the sugars are absolutely pure it is impossible to distinguish between them by any chemical means. One simple test is to put some of the sugar in a bottle and tightly cork it. A glass stoppered bottle is the best. Allow it to remain in a warm room for several days, then open it and immediately smell. If it is beet sugar there will be a most unpleasant smell, but cane sugar will be practically odourless. In the " ; for April 2nd, 1914, ^Ir. F. Newsham gives the following test :â " Apply a lighted match to a corner of a piece of sugar. The sugar will melt and drop. .If the drops are of a red colour the sugar is made from beet, but if the drops are pure you may safely infer the source is ;.
