The factory we visited dealt with about 33,000 bushelsof potatoes in 24 hours. The price of the flour per ton atthe factory last year was £S, and is this year £1$. Fromabout 137 lbs. of potatoes some 20 lbs. of first quahty flour,4^ lbs. of the second quality, and about a pound of thethird quality are made. A good deal of the flour goes to Italy and South Americafor macaroni. The flour is also used for starch, and in thefacing of linen and cotton and the production of special kind of potato is grown for the factories, and thisyear 1,100, 1,375, and even 1,500 bushels per hectare(2i acres) were produced on the excellent potato land ofGroningen. Shareholders in the co-operative factory may sell potatoesfor consumption, but not to another factory. Some 25
