The second grade is green com, but too matureto qualify under the above grades. The grains are harder and havemore starch and the hull is tougher. There may be some separation ofbrine and a darker color from processing. Succotash is a mixture of corn and beans, the latter preferably greenlima beans. The beans must be present to the amount of not less than20 per cent. If the ripe lima bean be used, that fact must be declaredupon the label. The grades of succotash correspond to those of packing of com and succotash is almost exclusively in No. 2 Okra. CANNED FOODS. 47
