This is done by gathering the leaves together and tying with yarn or raffia to exclude the light and air from the inner leaves which must be done when quite dry or they will rot. Another method is to cover the plants with boards or slats. In three or four weeks they will be blanched. After a shower the boards must be taken off or the plants untied, to allow drying. Dreer's Giant A strong-grow- ing variety with a large white heart and broad stems; good for fall and winter. On account of the beautifully curled leaves this variety is used freely for garnishing Pkt., 10 cts.; oz., 25 cts.; i lb., 75 cts. Green Curled Winter. Standard sort for fall and winter crop. Pkt., 10 cts.; oz., 20 cts.; i lb., 50 cts. White Curled {Self-blanching). Leaves pale green, grows to a large size, crisp and very tender. Pkt., 10 cts.; oz., 20 cts.; i lb., 50 cts. Broad-leaved Batavian (Escarolk). Leaves broad, light green, nearly plain. Pkt., 10 cts.; oz., 20 cts.; i lb., 50 cts. French Endive. page 21.
