Sodium nitrate crystals, coloured scanning electron micrograph (SEM). Sodium nitrate is the most important naturally occurring nitrate. There are large deposits in Chile and Peru, but it is also made synthetically. Sodium nitrate is used as a food preservative, a fertiliser and in the production of explosives.
