Red rice (Oryza sativa). Red, or whole grain, rice has not had the bran (aleurone and pericarp) and germ removed. The colour is the natural tint of the pericarp. The process to produce white rice, known as polishing, removes the bran and germ which contains a high proportion of the fibre and nutrition in the grain. Red rice is a whole food. This organic rice is grown in the south of France, in the region around the mouth of the River Rhone and the Camargue marshes.
