About six pounds of seed to the acre willgive about twelve seeds (fruits) to a foot. There are many good varieties of stock beets. Among thebest are Long Red, Yellow, or Golden Tankard, Yellow Globeand American Sugar. The latter is not a true sugar beet, but ismuch richer in sugar than the ordinary varieties of stock beetsand, possibly, of better feeding value. Sugar Beets, from which is made a large amount of thesugar of commerce, are grown in a similar way to stock beets,but on a large scale require a rather differeit and special. BEETS. 141 treatment. There is no trouble about raising them with alarge percentage of sugar in any of the northern states, butthe drawbacks to its becoming a more general industry are thevery expensive machinery required to extract the sugar eco-nomically on a large scale, the small of profit and thelow price the manufacturers have been willing to pay for thebeets. Sugar beets grow entirely below ground, which makesthem difficult to dig, and they do not grow to large size, seldomweighing more than four pounds. The part of a beet aboveground does not contain much sugar. It is recommended to sowabout 18 lbs. of seed of sugar beets per acre. LEAF BEET OR SWISS CHARD. Native of Southern Europe.—Biennial.—This appears to be exactly the same plant as ther- ~^ \ beet root, except that in its mon table beets.
