Another source of profit that heretofore has been overlooked by most farmers is the raising of the fall and winter calf on this same milk-substitute. Many farmers and dairymen have taken up winter dairy- ing reaping the extra big profits on milk and cream during the winter months, but often the calf has been immediately "; Calves raised during the winter give you veal during the term of high prices and are just as easily raised then as during the summer.
